SATURDAY NIGHT DINNER
cooked again yesterday. this time it's Herb/Butter Rice, Asparagus Pork Bacon and Roasted Chicken. Not much photos here... bz ma! Own style, try at own risk!
Herb/Butter Rice
1. Heat butter. When melted, add garlic, onions and fry til fragrant
2. Add some bay leaves and a cinnamon stick (crack it a bit to bring out flavor). fry til fragrant
3. add in uncooked white rice and chopped parsley, mix well.
4. finally add raisins, mix well and remove
5. cook the rice as you would normally, salt/pepper to taste.
Asparagus Pork Bacon
1. Cut asparagus in half.
2. cover asparagus with some olive oil
3. cut bacon in half if too long, roll 4 asparagus in it
4. add salt if you want, i prefer the original smell/taste.
Roasted Chicken
1. clean chicken, rub olive oil on skin, and then rub black pepper + herbs
2. add abit of black sauce + soy sauce on the skin for browning
3. Stuff whole Garlic, chopped yellow onions and bay leaves into cavity
4. Place potatoes, carrots and tomatoes on baking pan, and place chicken on the veges
5. Pour red wine on the pan and mix with veges
6. Heat oven to 210celc and bake/grill for 1hour. turn the chicken after 20 minutes. The breast-side might need longer time.
7. For the final 10-15minutes, put the asparagues into the even and grill. The juice will drip onto the chicken. yum
8. when done, remove chicken and veges. and abit of hot water onto the pan to make some sauce. Remove most of it into a bowl
9. tried something new. pour herb rice onto the remaining sauce on the pan and mix well. somehow it brings out more aroma. hmmm
